About this fish
Snakehead is the go-to fish for hot pot and quick braises across East Asia, chosen because its flesh is exceptionally firm and holds together where softer fish would fall apart. Cut on the bias into wide, thin slices, each piece is mostly white flesh with a bold line of dark skin along one edge.
Because the slices are thin and boneless, they are equally at home in a poaching broth, a gentle stir-fry or a steamed plate.
How to cook it
Swish through simmering hot pot broth for 30-60 seconds, or stir-fry gently with ginger, spring onion and a splash of wine. Do not overcook - the flesh firms quickly.
